The concept craze has hit Paris, and it’s not at all a bad thing. The Hôtel Renaissance Paris Le Parc Trocadéro (55-57 Avenue Raymond Poincare, 75116 Paris) has redone its bar in green and white to go with the garden and serves only drinks made with gin: lovely flowery or fruity but not-too-sweet concoctions with fanciful names like Flower Power. Meanwhile, in Saint Germain des Prés, Lebanese chef Karim Haïdar has opened a pocket-sized restaurant, L’Ecume des Bulles (3-5 rue des Quatre Vents, 75006 Paris) that serves only shellfish and Champagne or Sancerre – perfect when you want a classy snack or a light meal and feel like splurging a little: €22, for example, buys six oysters, six shrimps and a glass of Sancerre.
